Hacienda Grimon is run by the Olivans, a family with a long winemaking tradition in Rioja. Grimon was established by Paco Grimon, who runs the bodega, and his brother Eliseo, who takes care of the viticulture. Their 25 hectares of vineyards are based in the Valle de Jubera, a secluded and little known corner of Rioja Alta with a great viticultural history. Viticulture is organic; although not certified, there is no use of herbicides and pesticides, and sheep manure is used as fertilizer.
Harvested manually after a rigorous selection in the vineyard the grapes are transferred to the where the bunches are selected a second time before going through de-stemming. Once this process has passed, the grape-must goes to steel tanks with a capacity of 15,000 liters, where alcoholic fermentation takes place, which lasts between nine and twelve days. Once fermented the wine is kept in its tank along with its own lees until malolactic fermentation occurs naturally. The wines are not clarified or stabilised so it is possible that with the passage of time it may decant some of its natural components. This is why we recommend decanting.
